RYE, NYC
RYE by Martin Auer is not just bread. It’s a remembrance. A return to something older, quieter, truer. Made from only four elements: flour, water, salt, and time. It honors the integrity of Austrian rye and the patience of traditional craft. Shaped by hand, fermented slowly, baked daily on Lafayette Street - RYE is both rooted and modern, an expression of simplicity as truth.

That same reduction defines the space. Its minimalistic language mirrors the simplicity of the bread itself. Nothing unnecessary, nothing added for effect. Just as RYE is made from four essential ingredients, the interior is composed of only a few honest materials: oak, textured plaster, light, and linen. Nothing else.
At the heart of the space is an open bakery. The process is visible from beginning to end: mixing, shaping, resting, scoring, baking. Guests can watch the bakers work and see the loaves emerge from the oven throughout the day. The bakery is not hidden behind the store. It is the store. Craft becomes part of the architecture.
